My main pregnancy craving has been cake so decided I absolutely had to make a cake this morning, my toddler loves it as well so this is what we shall be eating when he wakes up from his nap. I made it in my bread machine, because it easy and less mess but I guess it would work just as well (if not better!) in a normal oven.
Here’s the recipe (it’s one I’ve adapted from a few various recipes I have tried)
Ingredients:
- 2 Eggs
- 175g/6oz brown sugar (ideally muscovado)
- 200ml/7 fl oz sunflower oil
- 200g/7 oz carrot coarsely grated
- 225g/8oz wholemeal flour
- 1 tsp bicarbonate of soda
- 2 tsp ground cinnamon
- zest of one orange
- 50ml freshly squeezed orange juice
Topping
- 115g/4oz half fat cream cheese
- 4 tbsp butter (softened)
- 85g/3oz Icing sugar
(I haven’t made the topping today as I didn’t have any cream cheese!)
- In a bowl beat the eggs well and then add the sugar and oil, mix until well blended and then add the grated carrot and mix again.
- Sift in the Flour, bicarbonate of soda and cinnamon. Mix everything together well.
- Tip the mixture into you bread pan (or a well greased loaf tin if baking in the oven) and bake for 50 mins until nicely risen, firm to the touch and the sides start to come away from the bread pan.
- Remove and leave to cool on a wire rack
- To make the topping, place all ingredients in to a bowl and mix together until smooth (I use an electric whick on low speed)
- Spread cooled cake with topping and leave to firm up a bit before serving.
